Recipe: Spinach, Apple and Pecan Salad

It’s time to start thinking of yummy healthy ways to cut those calories and enjoy food at the same time. Try this spinach, apples, red onion & pecans in a sweet-tart dressing or other healthy dressing!

Spinach, Apple and Pecan Salad

Serves: 4

Ingredients:

  • 3 tablespoons olive oil
  • 1 1/2 tablespoons cider vinegar
  • 1 tablespoon prepared mustard
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 golden delicious apple, halved, cored, thinly sliced
  • 1/4 cup red onion, cut in thin strips
  • 3/4 lb fresh spinach, washed, stems removed, leaves torn
  • 1/2 cup toasted pecans

Directions:

  • In serving bowl, whisk oil, vinegar, mustard, sugar, salt and pepper until thick.
  • Add apple and onion.
  • Toss until apples and onions are covered with dressing.
  • Place spinach on top, then pecans.
  • Just before serving, toss.

Recipe: Holiday Cran-Apple Salad

Ingredients:

  • 4 C. fresh or frozen Cranberries
  • 3 C. Miniature Marshmallows
  • ¾ C. Sugar
  • 2 C. finely chopped Apples (Gala, Empire, Yellow Delicious)
  • ½ C. seedless Green Grapes, quartered
  • ½ C. chopped Walnuts
  • ¼ t. Salt
  • 1 C. Heavy Whipping Cream, whipped

Directions:

  • Place cranberries in food processor, process finely chopped.
  • Transfer to a large bowl, stir in marshmallows and sugar.
  • Cover and refrigerate overnight
  • Just before serving, stir in apples, grapes, walnuts and salt.
  • Fold in the whipped cream

Recipe: Ham & Apple Salad

Ingredients:

  • 4 cup Leaf Lettuce (torn curly)
  • 4 cup Boston Lettuce (torn Boston lettuce about 2 small heads)
  • 8 oz Applewood Smoked Ham (cubed)
  • 1 Red Delicious Apple (chopped)
  • 1/4 cup Raisins
  • 3 tbsp Apple Holler Apple Cider
  • 2 tbsp Cider Vinegar
  • 1 tbsp Honey Mustard (light)
  • 2 tsp Vegetable Oil
  • 1/8 tsp Black Pepper (freshly ground)
  • 1/2 cup Cheddar Cheese

Directions:

  • Combine first 5 ingredients in a large bowl.
  • Combine apple cider and next 4 ingredients in a small bowl; stir with a whisk. Pour over lettuce mixture; toss well to coat.
  • Spoon salad mixture onto 4 individual salad plates. Sprinkle 2 tablespoons cheese over each salad.

Recipe: Grilled Apple Rings

Yields: 4 servings

Ingredients:

  • 1/3 c. sugar
  • 1/4 tsp. ground cinnamon
  • 4 med. baking apples, cored and cut crosswise into 1-inch slices
  • 1/4 c. butter, melted

Directions:

  • Mix sugar and cinnamon; reserve. Brush both sides of apple slices with butter.
  • Grill apples 3-4 inches from medium coals 8 minutes; turn.
  • Sprinkle with sugar mixture (sugar melts while other side browns).
  • Grill 5-10 minutes longer until tender.

Recipe: Crunchy Apple Cole Slaw

This is a fresh and simple coleslaw that is seasoned just right. You’ll find yourself wanting just one more helping. Enjoy!

Yields: About 6 cups

Serves: About 6 People

Ingredients:

  • 1 head of cabbage shredded
  • 1 apple, sliced and cut in small pieces
  • 1 small carrot, julienned
  • Half a red onion, sliced thin
  • 1/4 cup golden raisins or dried cranberries
  • 3-4 Tbs. Extra Vigin Olive Oil
  • 1/4 c. mayonaise (optional if you want a healthier version)
  • 1 T. Apple Cider Vinegar
  • 1-2 tsp. organic raw agave nectar or sugar
  • 1/2 tsp. dill seed
  • 1/2 tsp. caraway seed
  • Season with Salt & Pepper or Apple Hollers Seasonings

Directions:

  • Toss and stir together ingredients and then season. Then enjoy this crispy tasty coleslaw!

Recipe: Apple-Walnut Kuchen

Ingredients:

  • 1 pkg. Active Dry Yeast
  • 3 Tbsp.Warm Water (110º F.)
  • 1 tsp. Granulated Sugar
  • 1/2 cup Chopped Walnuts or Pecans
  • 1 cup Packed Brown Sugar, divided
  • 1 tsp. Ground Cinnamon
  • 1/4 cup Chilled Butter, cut up
  • 1/2 cup Butter, softened
  • 1 Extra large egg
  • 2 cups AP Flour
  • 1 Tbsp. Baking Powder
  • 3 Cups Apple Slices

Directions:

  • Preheat oven to 350° F. Dissolve yeast in warm water, in small bowl; stir in granulated sugar. Let stand 10 minutes, or until mixture expands and starts to bubble.
  • Stir together walnuts, 1/2 cup brown sugar and cinnamon; cut in chilled butter until mixture resembles small peas. Set aside for topping.
  • Beat together remaining 1/2 cup brown sugar, softened butter, yogurt and egg on medium speed of electric mixer until mixture well blended. Beat in yeast mixture just until blended (may look curdled).
  • Mix flour and baking powder; stir into yogurt mixture just until moistened. Spread or pat dough with floured fingers evenly in greased 13x9-inch baking pan (batter will be sticky). Arrange apple slices in rows, overlapping slightly, over batter.
  • Sprinkle topping mixture evenly over apples. Bake 35 to 45 minutes or until a wooden pick inserted in center comes out clean, and apples are tender. Cut into squares and serve warm or cooled.

Recipe: Apple Rhubarb Bread

Ingredients:

  • 1 1/2 cup finely chopped rhubarb
  • 1 1/2 cup chopped apples
  • 1 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 whole eggs
  • 3 cups flour
  • 1 cup nuts, chopped
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Directions:

  • Heat oven to 350º. Grease bottom of 2 loaf pans 8 1/2" x 4 1/2" x 2 1/2" or 9" x 5" x 3".
  • Mix apples, rhubarb, vanilla, oil, sugar, and eggs in large bowl. Stir in remaining ingredients.
  • Pour into pans. Bake 50 to 60 minutes or until tested done.
  • Cool 10 minutes. Loosen sides of loaves from pan. Remove to wire rack.

Recipe: Apple & Chicken Salad

Serves: 4

Ingredients:

  • 3 cups diced cooked chicken
  • 1/4 cup dried cranberries
  • 1/2 cup diced celery
  • 2 to 3 tablespoons finely chopped red onion
  • 1/2 cup diced apple
  • 1/4 cup chopped walnuts or pecans, optional
  • 4 to 6 tablespoons mayonnaise
  • 2 teaspoons lemon juice
  • 1/8 teaspoon curry powder, or to taste, optional
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon ground black pepper
  • lettuce leaves

Directions:

  • Combine the chicken, cranberries, celery, onion, apple, and walnuts, if using.
  • In a cup or small bowl combine 4 tablespoons of mayonnaise. the lemon juice, curry powder, if using, and salt and pepper. Stir into the chicken, adding more mayonnaise as needed and for taste. Line bread or rolls with lettuce and spread chicken salad on the bread or serve the chicken salad on lettuce-lined plates.
