Strawberry Brownies

Celebrate strawberries with us by making this recipe at home!

Ingredients:
– 1 box brownie mix
– 1 1/2 cup halved strawberries
– 2 1/3 cup semisweet chocolate chips
– 1 cup heavy cream

Directions:
1. Preheat oven to 350 degrees and line an 8″-x-8″ pan with parchment paper.
2. Prepare brownie batter according to package instructions. Pour batter into prepared pan and bake until a toothpick inserted into the middle comes out with only a few moist crumbs (about 20 minutes). Let cool completely in pan, then top with strawberries.
3. Make ganache: Place chocolate chips in a medium bowl and set aside. Heat heavy cream in a small saucepan over medium heat. When bubbles begin to break the surface around the edges, turn off heat.
4. Pour hot cream over the chocolate chips. Let side for 5 minutes, then whisk constantly until the sauce is smooth. Pour over the strawberry layer.
5. Refrigerate brownies until the ganache has set (about 15 minutes).
6. Slice into squares and enjoy!

Oatmeal Overflow Apples

Ingredients:
– 4 apples
– 1 cup rolled oats
– 1/4 cup brown sugar
– 1 teaspoon ground cinnamon
– 1/4 cup butter

Directions:
1. Preheat oven to 350 degrees.
2. Core each apple making a large well in the center and arrange apples on a rimmed baking sheet.
3. Mix oats, brown sugar and cinnamon together in a bowl; cut in butter until evenly combined. Spoon 1/4 of the oat mixture into each apple.
4. Baked in the preheated oven until apples are tender and filling is bubbling (30 minutes).

Apple Pie Granola Bars

Try out this healthy, yummy snack!

Ingredients:
-2 cups rolled oats
-1/2 cup shredded, unsweetened coconut
-1/2 cup pecans, chopped
-1/3 cup dates
-1/4 cup coconut oil
-1 tsp vanilla
-1/3 cup honey
-1 tbsp cinnamon
-1/2 tsp nutmeg
-1 cup dried apples, chopped

Directions:
– Preheat oven to 350 degrees. Place the oats in a blender or food processor and pulse for 5-10 seconds.
– On a baking sheets, combine the oats, shredded coconut and pecans and toast in the oven for 10 minutes, stirring after 5 to ensure mixture does not burn.
– Place the dates in a food processor and blend until fully combined.
-In a sauce pan over medium heat, combine the coconut oil, honey and vanilla. As the liquid heats up, begin to stir the date paste until it becomes well combined.
-In a bowl, combine the toasted oat mixture, chopped apples, cinnamon, nutmeg and hot liquid from the stove. Stir until completely mixed.
-Firmly press the mixture into a baking tray lined with parchment paper. Cover with plastic wrap and refrigerate for at least two hours until bars become firm.

Apple Banana Cupcakes

Enjoy two fruity favorites in one delicious dessert!

Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
2/3 cup shortening
1 1/4 cups white sugar
2 eggs
1 tsp vanilla extract
1/4 cup buttermilk
1 cup bananas, ripe and mashed
2 apples, peeled, cored and shredded

Directions:
1. Preheat oven to 375 degrees. Grease and flour 24 muffin cups, or use paper liners. Sift together the flour, baking soda, salt, cinnamon and nutmeg. Side aside.
2. In large bowl, cream together the shortening and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and buttermilk. Beat in the flour mixture, mixing just until incorporated. Fold in the mashed bananas and shredded apples. Fill each muffin cup half full.
3. Baked in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool.

Turtle Apple Pops

Enjoy this one-of-a-kind apple treat on a stick!

Ingredients:
2 apples, sliced into halves
1 1/2 cup chocolate chips
1 tbsp coconut oil
2/3 cup caramel
1/2 cup toasted pecans
Sea salt
4 popsicle sticks

Directions:
1. Line a medium baking sheet with parchment paper.
2. Make a small incision in the bottom of the apple slices and stick in popsicle sticks.
3. Dip apple slices in chocolate and place on prepared baking sheet. Sprinkle with pecans and place in fridge for 10 minutes.
4. Drizzle with caramel and sprinkle with sea salt. Return to fridge to harden, this time for 5 minutes.

Baked Apple Pie Tacos

Ingredients:
5 flour tortillas
4 tbsp unsalted butter
3/4 cup sugar
3 tsp cinnamon
4 apples (peeled, chopped and cored)
1 tbsp lemon juice
1/4 cup caramel sauce
whipped cream

Directions:
1. Preheat oven to 400 degrees. Set aside 12-cup muffin pan.
2. Cut 4-5 circles from each tortilla using a circular cookie cutter until you have 25 total. Place the piece into a large mixing bowl and add 2 tbsp melted butter, 1/4 cup sugar and 1 tsp cinnamon. Toss until coated.
3. Flip the muffin tin upside down. Place the tortilla pieces in between muffin cups and bake 6 minutes.
4. Mix the chopped apples with lemon juice and remaining sugar and cinnamon. Saute in a frying pan over medium heat with the remaining butter until soft.
5. Remove tacos from oven and spoon apple mixture into them. Then top with caramel sauce and whipped cream.

Caramel Apple Monkey Bread

This is the perfect treat for any occasion!

Ingredients:
1/2 cup sugar
1 teaspoon ground cinnamon
2 cans refrigerated biscuits
1 1/2 cups small, diced apples
1 cup packed light brown sugar
3/4 cup unsalted butter, melted

Instructions:
1. Preheat oven to 350 degrees.
2. In a medium bowl, stir together the sugar and cinnamon. Set the mixture aside.
3. Separate the dough into 16 biscuits then cut each one into quarters. Add each piece of dough to the bowl with cinnamon and sugar, tossing it to coat on all sides. Layer the coated dough pieces with the diced apples in the prepared bundt pan.
4. In a small bowl, mix together the brown sugar and melted butter. Pour the mixture evenly on top of the dough. Bake for 28-32 minutes until it is no longer doughy in the center. Remove bread from oven and allow it to cool for 5 minutes in the pan.
5. Place a serving plate on top of the pan and flip it upside down.

Warm Skillet Cinnamon Apples

Ingredients:
4 Apple Holler apples
1/2 cup brown sugar (firmly packed)
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2 tablespoons water
1 tablespoon butter

Directions:
1. Peel/core apples and cut into thick slices.
2. Toss together the apples, brown sugar, cinnamon and nutmeg either in a bowl or in plastic bag (shake until coated).
3. Cook apple mixture, two tablespoons of water and one tablespoon of butter in a medium sized saucepan over medium heat, stirring occasionally.
4. Cook for 8-10 minutes or until apples are tender – but not mushy
5. Serve as is or top with vanilla ice cream and enjoy!

Chocolate Covered Apple Bites

Ingredients:
2 apples
2 cups of chocolate (any kind)
1/2 cup sprinkles (or any desired topping)
2 cups water
1 tbsp lemon juice

Directions:
1. Wash apples and cut them into bite-size pieces.
2. In a bowl add water, lemon juice and apple pieces. Set aside.
3. Add chocolate pieces to a double boiler and melt the chocolate over a low temperature.
4. Put your topping a bowl and set aside.
5. Once chocolate is melted, strain the apple and wash the apple pieces. Pat dry.
6. Dip each piece in melted chocolate, decorate it in desired topping and place on a cookie sheet with parchment paper.
7. Refrigerate pieces until chocolate sets.
8. Enjoy!

Apple Oatmeal Muffins

Apples and a double dose of oats add a boost of nutrients to these delicious muffins!

Ingredients:

1 1/2 cups all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 cup quick-cooking oats
1 teaspoon coarse salt
3/4 cup sugar
2 large eggs
1/2 cup whole milk
1 stick unsalted butter, melted and cooled
Crumb topping for muffins
1 apple, peeled and cut into 1/4-inch dice (1 1/4 cups)

Directions:

  1. Preheat oven to 350 degrees, line a standard 12-cup muffin tin with baking cups.
  2. In a medium bowl, whisk together flour, oats, baking powder, salt and cinnamon. In a separate bowl, whisk together sugar, eggs, butter and milk. Stir wet ingredients into dry ingredients, then stir in the apple.
  3. Divide batter even;y between cups, adding a scant 1/4 cup to each. Sprinkle with crumb topping and bake until tops spring back when lightly touched, about 20 minutes.
  4. Cool in pans for 5 minutes, then remove to wire rack to cool completely.
