Appledoodle Cookies

Ingredients:
– 1 apple, large
– 2 eggs
– 3 cups flour
– 1 tsp baking soda
– 4 tsp cinnamon
– 1 tsp cream of tartar
– 1 tsp salt
– 1 3/4 cups sugar
– 2 tsp vanilla
– 2 sticks butter

Directions:
1. Preheat oven to 350 degrees. In a medium bowl, combine flour, cream of tartar, baking soda, salt and cinnamon. Mix well and set aside.
2. In a mixing bowl, combine eggs, sugar, butter and vanilla.
3. Mix until creamy and gradually add the flour mixture. Mix until combined.
4. Add grated apple and mix well.
5. In a small bowl, combine sugar and cinnamon. Mix well. using your hands, roll the dough into 1 inch balls and roll the sugar-cinnamon mixture until fully combined.
6. Place on parchment-lined baking sheets and bake for 10 to 12 minutes. Cookies will look puffy when done. Allow them to cool for 5 minutes.
